Not to ruin this for everyone, but this is being made by AtGames. The same people who made those terrible plug & play Genesis/Mega Drive things in the west. Maybe they'll get it right this time, but I doubt it. They have a long history of sucking. Shame.

Even if all the licensed stuff is removed I guarantee modders will have them back in the PC version in no time at all.

Dual-language is the absolute most important improvement by miles and I'm very glad they've included it. Also - - Skip time/save anywhere in Shenmue 1 - Removing fade-in for NPCs - Uncompressed and less scratchy audio (assuming SEGA still has all the source material) - Some textures need to be redon...

I don't think we'll see Wong or Joy again, their part in the story seems pretty much done. Ren will definitely return, Guizhang will almost certainly return at some point in the future, but not necessarily in 3. Zhu could go either way.
