FIFA this gen, although Pro Evo was a beast last (and btw, why does the 360 version get shown little to no love? It was fucking brilliant!)

I'd say Dragon Quest VIII too. I'm not even into the series, but those cel-shaded graphics are pretty either way.

I've always had a soft spot for Clock Tower. Haven't actually played Deception yet, despite really wanting to. But just based on sheer conceptual appeal, Clock Tower would still be my own personal pick.
