Well I assume that Ine-san probably took over the estate funds etc. Plus a dojo would probably have students training there so Fuku-san does that (and that is how they gain income).

Is it true that in a later Shenmue, the house will be burnt down?

I think you should be able to set Ryo's watch alarm. If you have a meeting the next day, you could set it close to that meeting... or set it earlier to see the sunrise, etc.
Now THAT would be some serious innovation.

The bad ending is Lan-di beating up Fuku-san, then killing Ryo when he tries to stop him
