I am going to wait until the end of the Kickstarter to see what tiers are final, and what opportunities are available, I am hoping there are extra dinner slots for the 10,000 tier made available.

Oh, but you didn't have to withdraw it. You can change your pledge at anytime in a few clicks without having to remove the pledge completely. Unless you wanna, I guess. :(

I've only backed for digital versions before, but yeah I got all the "perks". I think this will also be the case.

Yes, all perks are included. I used Paypal for my pledges towards the Bloodstained campaign, including physical rewards.

Too be fair dude, if you've played 1 and 2 already, the greatness of them should be a no brainer to helping Shenmue 3. You mustn't have enjoyed the first 2 games?
