Fighting games are alittle different though because they're specifically competitive. Compare vanilla SF2 to Championship or VF5 to VF5R, truthfully the genre is very iteration heavy even Fatal Fury and KOF saw new games every few months to a year. I don't think they should try and charge an arm and a leg, with DLC it actually makes fighting games easier to release Capcom just hasn't realized that DLC should help extend gameplay past its limitations, not within them.
As for Nintendo i dunno, they re-released a bunch of Wii versions of gamecube games and then there are those collections but they usually make expensive games easier to find or add a new playstyle (I don't think I'll ever play majora's mask on an n64 controller again) its not like there was ocarina of time, then a few months later ocarina of time complete that had an extra dungeon. Generally if you buy a nintendo game you'll be playing that version of it for a few years.
Still Capcom and nintendo aren't as bad as say Deep silver releasing a GOTY for Dead Island (lol game of the year lol) or how Bethesda is absolutely reliable to release one within 18 months. uncharted, red dead, batman, LA noire, theres just a lot of "heres all the dlc" packages being released by American/European companies is all I'm sayin.
