Somewhere out there, there are probably saturn clips that portray the entire plot, or all the important scenes.

That's pretty mind boggling actually.

They developed (although there was never a full game, more likely a series of demos) the story AT LEAST until the beginning of Shenmue III, and probably further in- because Yokosuka to Guilin is only what they have willingly showed us of Saturn Shenmue.

Right? I completed Shenmue IIx a couple days ago and watched the Saturn movie and thought the same thing. They may well have demoed the whole plot of the series on the Saturn.

My guess is that they just didn't understand what they were seeing. It also describes QTE as an "interface where yellow arrows point toward what's next. If you don't follow them, you alter the games ending." It feels like the article is just speculating from footage.

Yeah, sounds like they didn't have much to go off, so they probably just saw 4 stand out characters from the shots they were presented and made some shit up to get it in a magazine making it look as though they had special insight that others don't.

Yu was the co-producer indeed but the main man behind Daytona was Toshihiro Nagoshi, one of the Shenmue lead programmers and the creator of Yakuza.

That's probably right.
One of the things I remember the most from even before Shenmue 1 came out, was that there was supposed to be a huge castle to explore, with 1200 rooms, all of them explorable. Sadly, I threw all my old magazines long ago.
In retrospect, I think they were probably talking about Kowloon.
